I was lucky enough to find a big packet of yeast at Costco the other day. I haven’t seen it there in months, maybe I wasn’t looking hard enough, but I bake whole wheat bread regularly and was starting to worry about how much I had on hand. Thankfully, the bread making can continue.
Going to the store makes me a bit emotional lately. The standing in lines because a maximum number of people are allowed in at a time, reminders everywhere to keep your distance, and smiling at people while wearing a mask, then realizing they can’t even see the friendly gesture… it’s deflating.
One thing that is bringing a bit of joy to me is cooking and baking for my family. Kids “helping” in the kitchen can be stress inducing, but I try to let them be a part of it.
In addition to my regular bread, I love to make this no-knead cast iron bread. It’s crusty, easy (seriously!), and always turns out amazing. Just follow the directions, warming the cast iron pot long enough is key. Pair it with some soup, like this lemony lentil one and you’re in for a real treat.
I keep making this fettuccine alfredo. Can’t stop won’t stop.
These chocolate chip chewy bars are my go to. A hint of cinnamon, chewy oats, chocolate, they’re perfection. I make them with whole wheat flour, but if you’re the white flour type go for it. I love that I don't have to roll a bunch of dough, just press them in a pan and bake! (Also, it says to melt the butter, but just soften it.)
This chocolate cake doesn’t need any eggs or butter. I grew up dousing it in cream. Is that a thing, or just a thing in my family? Either way, I highly recommend it.
